List of Ingredients:

  • 4 cans of mixed vegetables; drained
  • 2 8-ounce cans tomato sauce
  • 2 cups water or tomato/vegetable juice
  • 1 14-ounce can diced tomatoes; do not drain
  • 1/4 teaspoon minced garlic
  • 1/4 cup onions; chopped
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

Combine all ingredients in a large dutch over. Simmer over medium heat for 30 to 45 minutes. Serve.


Servings: 6 to 8; depending on how heavy-handed you are with a soup ladle.


Garnishments: (optional): Sprinkle parsley on top after dipping.
